How to choose spring onion
Fresh spring onions are best. Fresh spring onions have leaves that are green not yellow. For carving choose spring onions that do not have broken or bent leaves.
1. Cut the leaves of the spring onion, lengthwise, into three. | |
2. Put a cut leaf segment between the barrel of the knife and a finger and slide along the length of the leaf to start the leaf curling. | |
3. Do this for all the cut leaf segments. | |
4. Put the spring onion into very cold water and watch the leaves curl. | |
5. A spring onion with fancy curls. |
